We signed up for the Winter Share with our CSA and it has been an adventure figuring out just exactly how to eat pounds and pounds of root vegetables. Over the last 10 weeks or so we've made:
Veggie Latkes - like potato latkes only with carrots, parsnips, beets and salsify
Squash Soup - a plain kind with cream and Red Kuri with coconut milk
Raw Slaw - shredded raw beets, carrots, celeriac and salsify with vinaigrette, raisins, craisins and sunflower seeds
Basic Stew - so much basic stew
Borcht - Yup, beet soup. We dipped our grilled cheese in it.
Garlic Bean Dip
Basic roasted root vegetables several times...Russ had the idea to put in a whole head of garlic once. That was really good on toast. Mmm...good on toast.
Winter Root Veg Braise from Joy of Cooking a couple times but it's pretty complicated.
Brussels Sprouts-- dude, when was the last time YOU ate a brusels sprout???
Many kinds of cooked greens as a veggie/side or in spaghetti - collards, mustard greens, kale, beet greens
I even made Salsa Verde but used collard greens instead of parsley and it went great with the salmon Russ bought.
Yes this was a lot of time in the kitchen with a peeler and stained fingers but it is so yummy and I do enjoy cooking.
